Purple Rain Smoothie

Sidenote: Does anyone actually know the other words in that song?

Happy Food Post, Friday! I always start Friday with the highest hopes of productivity. While that often tends to fade by lunchtime, each week I still dream big and this morning is no exception. Cheers to inspired breakfast (and to the weekend!)

I spent last night sending emails, connecting with some other bloggers, cleaning the new place, and packing us up for the weekend at the lake (which is surprisingly tiring with a dog), so I would say that my dreams of productivity have been achieved, right?!

I am extremely excited for this weekend, not only to get out to wakeboard and surf (and hopefully not take in half the lake through the face, again), get that summer glow that I have been searching for months for, but also for the *~* solar eclipse *~* on Monday! Who else is catching the hype for that? Alex and I will be headed downstate to get as close as possible, and we are hoping to get some cool pictures – so stay tuned!

As for this productivity helper, here is the recipe!

Purple Rain Smoothie

  • 1 banana68cc5625-6bf6-48a2-ae4c-f8f26b47d9d0
  • 1/4 mango
  • a large handful of mixed berries
    • Pictured is the frozen organic mixed berry blend from Trader Joe’s
  • 4-5 florets of cauliflower (I freeze mine for easy blending and extra chill)
  • 1 tbsp of coconut oil
  • 1/2 cup of vanilla greek yogurt
  • 3/4 cup of almond milk
  • 2 scoops of protein (I used Vital Proteins Collagen Peptides)
  • ½ cup of water (may not need all of it)

Blend together for a few minutes until you get the consistency desired, find a cute little mug or mason & get on your way to work, because you are probably late.
