As some of you know, eating with me isn’t always the easiest thing. It’s not that I’m ‘picky’, but certain foods make me feel pretty lethargic quite frankly. Not only do they make me bloated which is painful, they can cause increased urgency, my throat produces more excess mucus (gross, I know), my skin changes, and in some cases I get headaches and become irritable. Over the years, I have modified my diet and made many new recipes that work for me and my system. They may not be the perfect picture of health, but if my body tolerates it, I consider it a win.
Salads are traditionally viewed as boring or not filling (which they can be), but since my body digests them easily as compared to some veggies or grains, I’ve made them a big part of my life and not just the pre-game to a meal. This salad is one of my all time favorites and is my summer go-to!
Summer Strawberry Salad
- Bag of spring mix lettuce or spinach leaves
- 5 strawberries, thinly sliced
- 1/4 white onion, diced
- 1 avocado, cubed
- 3 strips of bacon, chopped
- 2 chicken breasts, thinly sliced
- Goat cheese to taste
- Garlic Expressions dressing
The vegetarian version of this is just as good, I promise! I’ve added chicken so I can easily stay up on the protein. I also prefer spring mix or spinach leaves to other types of lettuce because of the texture, but they can be substituted as well.
Now take that masterpiece you just chopped up and toss. Then toss it again. One more time! The avocado and goat cheese combine to help make a rich taste on the salad that, combined with the dressing, is amazing.
